Recipe: Peanut Butter - Chocolate Chip Cookies


I made this recipe for a family ski weekend. I thought it would be nice to have something sweet to munch on in between hitting the slopes. I am happy to say that these cookies were a big hit!


Ingredients
1/2 cup butter, softened
1/2 cup peanut butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 tbsp light corn syrup
2 tbsp water
2 tsp vanilla extract
2 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chips



Directions
Preheat oven to 375 degrees.
In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, and stir in the corn syrup, water, and vanilla.


Combine the flour, baking soda and salt; stir into the peanut butter mixture. Fold in the chocolate chips. Drop by 1/4 cup cupfuls 3 inches apart onto ungreased baking sheets.


Bake in the preheated oven for 12 to 14 minutes or until edges are golden. Allow to cool 1 minute before removing to wire racks to cool completely.


The recipe says it makes 2 dozen but I ended up with way more cookies than that! Good thing my coworkers also love baked goods.
