Recipes You Must Try: Panko, Parmesan & Parsley Pork Chops

Ok, So I realize that my Recipe Of The Week bit was a little failure because I got lazy and forgot to post recipes a couple of weeks in a row. Sorry. Soooooo I'm renaming it "Recipes You Must Try" and I will post them when I feel like it haha. I do cook everyday but sometimes I just get so excited about eating my food that I forget to take pictures OR I just throw a bunch of stuff together and forget to keep track of what I put in. This way I will be able to still share recipes with you and not feel bad when it doesn't happy every week or if I forgot to take a pic when I first make something.

So the first recipe I'm sharing is Panko, Parmesan & Parsley Pork Chops which I made last night. I got the reciped from urbanbundle via tastespotting.com which was recommended by Michelle from Oh Mishka and I did remember to take a picture and it was delicious!! The reason I made it, aside from how delish it looked, was because I already had all the ingredients at home! even the pork chops!

Panko, Parmesan & Parsley Pork Chops

Ingredients:
8 thin cut boneless pork loin chops (used 2 and just less of everything else)

1 cup panko bread crumbs
1/4 cup grated parmesan cheese
1/4 cup flour
2 eggs
2 tbsp fresh parsley, chopped
salt & pepper
1 lemon, cut into wedges
extra virgin olive oil

Directions:
Place boneless pork chops in a large zip lock bag or between 2 pieces of plastic wrap and pound to tenderize. Remove from plastic and salt & pepper both sides of the meat. Set aside. (This is a great way to take some stress out by pounding meat) :)

Finely chop fresh parsley - you should have about 2 tbsp. (I used dry)

Next you want to prepare your dredging/breading assembly line. Use 3 shallow dishes, the first should be your flour, plate 2 should have your 2 eggs (beaten), plate 3 should have your panko bread crumbs, parmesan, & parsley - use a fork to mix them together to evenly distribute the parsley.

Preheat a large skillet over medium-high heat with enough extra virgin olive oil to coat the bottom.

Start your dredging process: first coat the pork chop in flour on both sides. then dip in the egg. then finally in the panko mixture. make sure you fully coat both sides. set on a platter and continue dredging more chops.

Place the pork chops in the pan (you should get a good sizzle.) they will only need to cook about 3-4 minutes per side. you want to turn them over when they are nice and golden brown.

Remove the first batch and place on a plate with a paper towel to catch any excess oil.

You can add more oil to the pan for the second batch as needed.
Squeeze lemon over pork chops and dig in!

It really is quite easy to make! We used 2 thick cut pork chops because that is what we had and there are only 2 of us so they didn't pound out super thin but thin enough and still delicious!! I served the pork chops with roasted potatos and salad.

Enjoy!!

What Would You Take?

In the movie Leap Year, Matthew Goode's charactor begs the question,

"If your house was burning to the ground and you had only 60 seconds, what would you take?"

My verbiage may not exactly match the movie's but you get the idea.
So this morning on my way to work I was thinking, what would I take?
I came up with 5 things I would make sure I had:

1. Ryan
2. My Cats, Lilly & Jinx
3. My grandmother's diamond ring
(if it wasn't already on my finger or in the safe deposit box where it currently resides.)
4. My laptop
5. cellphone

The last two I would want not because they are expensive but because all of my pictures are on my laptop and I need to call 911 somehow right? 60 seconds may not be long enough for all those things but I would make damn sure I had my cats and Ryan by my side!

So,
What would YOU take??

Red, White and Pink

I'm talking Valentine's Day of course!! One day every year where we ladies are supposed to be spoiled silly by our men. Just kidding. While Valentine's Day has different meaning for everyone I mostly enjoy the holiday because of all the pink, red and hearts. Since I love hearts so much it's like a day made just for me haha.

All the stores are decked out and ready to assault your eyes with everything cutesy so prepare yourself before embarking on a shopping trip! I decided to pick a few things I like that say Valentine's Day to me, wether you are attached or single you can certainly enjoy cute Valentine's inspired clothes or accessories. Or even some gifts to give your Gal pals, or yourself because gifts for yourself are alwyas in fashion.

Tee, flip flops and socks from Old Navy
I don't recommend wearing the socks and flops together...

Sunglasses, pillow cases and photo frame from Urban Outfitters

Pink Amethyst ring from Macys

Red Rose Dress from Arden B

Tops from Forever 21

Poppy totes from Coach

Pink knit dress from Ann Taylor Loft

Red pumps and heart tote from BeBe
Tote also available in pink

Candy heart undies from Express comes with 4 adorable pairs

Remember when you were little? Did your Mom deck you out in red or pink or both? Mine did. This year I will proabably dress myself in V-day colors, but not in a onesie or overalls like back in the day.

Anyone making  big plans for Valentine's Day? We decided to skip gifts and just go out to dinner but I'd love to hear what everyone else is planning!

XOXO

Will I Flip for Flip Video?

I love taking videos but rarely do because my little Olympus FE-280 camera kind of sucks for videos. I have heard a lot about this little Flip thing. Does anyone have one? Do they make good videos? Mine videos always come out too dark when I use my digital camera.

The Flip comes in 4 different versions apparantly, Ultra, Ultra HD, Mino and MinoHD. Having an HD video camera would be pretty sweet,  the regular ones come in pretty colors too.

Hmmm thinking about making the investment, I think it might be a fun little toy!

Something else that might be fun? This adorable Compliments Dinnerware from CB2, I think they would put a smile on any guests face!

Hope everyone is having a great Monday!!

My little Lilly is having surgery today and I'm a worried mama,
I won't get to see her until tomorrow evening I hope she's not scared and lonely!!
Kitten separation anxiety over here today.

Interesting Fashion Find & A Chick Flick

I looking at Intermix online and these crazy shirts and dress really caught my eye. I'm not sure if I would wear them but they are definitely edgy & different and very aristic. I could actually see one of the tops paired with liquid (or leather) leggings or skinny jeans and a pair of studded shoes.

The designer is Beatrice Boyle for Browns Focus and you can check these styles out here:

Maybe throw on these leather leggings by Seventy Two Changes and these booties by Dolce Vita and you have yourself a pretty fierce outift.

And in other news. Today I went to see Leap Year with two of my Girlfiends. The movie was definitely a feel good romatic comedy and it actually had a lot of laughs. The plot was pretty obvious but I still enjoyed it and would recommend it for a girl's night! Amy Adams is so adorable and Matthew Goode is just yummy.

Enjoy the rest of the weekend dearies!!
